In China, Chun Mee is referred to as “Eyebrow Tea”, because of the thin curved leaves, which are mixed with grayish white buds. It is the daily tea of choice for most of China. The dry tea has a pleasant sweet plum fragrance. It is easy to drink, pairs well with a wide variety of foods, and leaves a clean plum-like aftertaste. Tasting Notes: The liquor is pale yellow. It has Plum-like aroma and taste. It’s Full-bodied, with a clean uncomplicated flavor, and moderate palate cleansing astringency.
Origin: Jiangxi Province, China
How to prepare it: Steep about 1 tsp. per cup, at 180 degrees, for up to 2 minutes. Be careful not to use water that is too hot, or steep it too long, because over-steeping will make it too astringent.
