Tasting Notes: Aroma consists of fresh green veggies and seaweed. The flavor is rich, vegetal and sweet, with a full rounded finish. The liquor is pale, and slightly cloudy, as it is supposed to be – tiny particles are added for richness and body, or ‘umami’ in Japanese. Very refreshing.
Origin: Japan
How to prepare it: Be careful to avoid over-steeping, or using water that is too hot. Steep about 1 tsp. per cup at 160-170 degrees for 1-2 minutes. Use cooler water, and short steep time (about 1-1/2 minutes) on the first infusion, to bring out more of the sweet notes.
